Forage (Before It’s Gone) – Food Porn Quicky

Before friends move, I strongly believe we should Forage together. At least, that’s what we did before my buddies Tiffany and Rick made the venture up to Seattle.

Last meal, before moving day….

Parsnip and cow? I forget to be honest, but I do remember that wrap part – apple.

It was good – as always at Forage, but I think I like that tiny croquette more from past dining experiences.

So, what is the forest now, you may ask? Well, we certainly asked as well.

I believe the moss was grown on site, by the chefs themselves.

Inside that crispy puffy-ness (almost like senbei but more airy) was a mushroom stuffing… fancy mushroom, but again, I’ll be honest and cannot remember the full description! Aye, damn this bad memory.

The only staple of the menu so far! Soft scrambled egg with sherry and maple syrup.

Always delicious.

Yes, that yummy.

We got some wine.

This dish came to us with a glass dome cover.

Small potatoes were smoked under the dome to provide a familiar college-like scent (in particular, I’m thinking the Ani DiFranco concert I once attended back in the day… hmmm… Rick brought this up, not me I say!) or it might just smell like pine.

Light buttery sauce – yeah, yeah, I totally forgot. Sorry.

Dill gel with curds and whey – love it. Add a bit of fresh fish roe for more flavor.

House-made bread with smoked butter.

A salad of greens with a roasted chicken vinaigrette and fresh house-made croutons.

Yum yum. Some home-grown flowers in there too.

The fleshy stuff are re-hydrated dried scallops with a variety of wild carrots.

It was good, but I think I like the fresh stuff better – can’t beat pan fried scallops.

Smoked trout with onions – this fish was amazinggggg.

Some greens for balance, of course.

Fresh greens and cabbage with shaved aged lamb shank – the chef told us this had been sitting for over a year.

Oh yeah, there was also very tender lamb meat underneath too. I don’t really love lamb, but I eat it at Forage.

Um, I cannot remember! Dah… Roasted greens – I think kale was one.

Mushrooms and some sort of delicious sauce…

Crispy pheasant and greens.

This was awesome. Tasted a bit like duck, but maybe healthier… hm.

Strawberries with a bit of (pine nut?) cake and candied tomatoes.

Oh, also custard. Delicious, even if I don’t like raw tomatoes. They were very lightly candied… since I don’t like raw tomatoes, I could’ve used a heavier coat of candy. Nonetheless – still delicious.

Probably my favorite dessert of the night – black walnut ice cream with elderberries and white chocolate shavings, I believe. I could eat a pint of that ice cream after dinner, maybe even a gallon without dinner.

Another yummy cool dessert – with berries and… stuff.

There was stuff inside too! I want to say it was sparkling yogurt… I know, I know, damn this memory!

And to finish off the night…

Caramel.

Black sesame chocolate.
