Engaging at Forage – Once Again…

My friends Michael and Runa recently got married in New York. However, before they did so, they came to Utah to see family and… of course…. dine at Forage. Here’s a quick recap of the night…

Here’s the menu for the night…

Starting us off: a refreshing burnet soda. A crisp, grassy beverage to wet the palate.

Grilled green beans with a light sauce (I totally forget what kind…). A touch of char, oil and snap on the beans.

Some sort of mousse mixture that I cannot recall…

Oh, I love this root… crisp potato haystack beds with a light herb salad and sauce.

Bonus course from Mikey’s good friend, Luke. The maple syrup egg with sherry cream.

This was a fried gooeyness of cheese, if I can recall correctly. “Coal.”

Very light and delicate skinned.

The usual house made bread with smoked butter and salt.

Smoked trout with nutty new potatoes and sorrel. Those potatoes are delicious.

Crunchy cukes with eggplant and that white stuff is a buttermilk concoction.

Beets, berries, onions. I don’t love onions (the flavor, yes, the texture, I think that’s what gets me), but the red was amazing – sweet and savory.

One of my favorites, for sure. Kohlrabi (tastes a bit like daikon meets potato) with a sour cream and dill sauce…

Bonus dish again: fresh picked mushroom with these funky tiny baby tomatoes, purposely picked before ripe.

I believe this was the wild carrot with malt that the broth was poured over. Very mouth-watering! i could drink a gallon of this stuff everyday.

Chicken with veggies! The perfect medallion of chicken was encased with this lightly crispy paper-thin skin – yum. Cover me a whole chicken of that, please…. of a stack of medallions as high as pancakes come in cartoons.

Bring on the desserts. While thimbleberry in that very delicious sparkling yogurt I love.

The best part though… inside where there’s a fluffy cake-ness and sherbert hiding under the sparkle.

A summer squash fluffy airy “cake” with other greens.

Shaved peaches and plums with fresh cheese and honey. I love desserts here.
